The Ultimate Valentine's Day Cupcake :)

Valentine's Day is coming up and it just so happens to be my second favorite holiday! (The first being Thanksgiving- I just love holidays related to food!) In high school, I would always dress up ALL in pink with the bows and the pearls and as much sparkly-ness as humanly possible and I would bake cupcakes and cookies for all my friends. Lately, V-day has been toned down significantly with my boyfriend living in the Philippines BUT this year will be our first V-day together in two years! And you can bet I'm going to go all out again!

For the last few days, I've been brainstorming what would be most romantic, delicious, and decadent cupcake to make for the love of my life? Well, what is more romantic than champagne, more delicious than strawberries, and more decadent than rose? So I decided to make a Champagne Cupcake with Strawberry Filling and Rose Champagne Buttercream aka the Ultimate Valentine's Day Cupcake.

The cupcake is moist and tender with a hint of delicious champagne. The strawberry filling is fresh and tart and just sweet enough. And the rose buttercream is fluffy and fragrant. Everything combined works perfectly together and the cute little conversation sweetheart adds the perfect Valentine's Day finish. I really couldn't have been happier with the end result and I would definitely make these again for any special occasion!
